A quarter of one of our pasture-raised cattle, seam butchered to your specifications and vacuum sealed.

• Grilling Steaks (~20 lbs.) — 4 Delmonico, 4 Ranch, 4 Denver, 4 Top Sirloin, Flank, Tri-tip, Flat Iron, Bavette, Coulotte, Skirt 
• Ground Beef (~48 lbs.) — 92% lean, vacuum sealed 1.5 lb. packs
• Savory Cuts (~12 lbs.) — Brisket, Short Ribs, Osso Buco, 
• Roast (~6 lbs.) — Top Round Roast
• Other optional — Marrow Bones, Soup Bones, Liver, Heart, Tongue,
